What causes it? Is it dangerous to eat eggs with this green ring? Find the answers in this article.

Having hard-boiled eggs on hand can always satisfy your hunger and avoid less healthy options. Whether in a salad, a sandwich, or straight from the box, hard-boiled eggs are delicious and will enhance any dish, both in terms of taste and nutritional value!

Eggs are a concentrated source of nutrients, vitamins and minerals. They are an excellent source of complete protein, as they contain all the amino acids our bodies need, as well as essential fatty acids for proper function. Eggs also contain lutein, a carotenoid that protects vision and prevents AMD (age-related macular degeneration). This nutrient is also found in green vegetables, but the one in eggs is more easily absorbed by the body and is therefore more beneficial!

Furthermore, eggs, and especially egg yolks, are the foods richest in choline – an essential nutrient that helps maintain brain function and thus prevent strokes. This observation is part of the conclusions of a scientific study published in the British Medical Journal, conducted on a group of 4 million people. According to this study, adequate egg consumption can actually reduce the risk of stroke by 25%.

Eggs are therefore excellent for your health. Hard-boiled eggs are a great choice because they are easy and quick to prepare, but you still need to know how to cook them correctly!

It can actually be a bit confusing to cook hard-boiled eggs: you never know how long they will take to cook! If they are not cooked properly, they will be very runny, and if they are overcooked, a green ring may form on the yolk!

What is the green ring on egg yolks?

A greenish ring on the yolk indicates that the eggs are overcooked. You simply left the eggs on the stove for a little longer than necessary. The scientific explanation for this phenomenon is quite simple: it is caused by a chemical reaction between hydrogen sulfide and the iron in the egg. When the egg white is exposed to heat, the hydrogen sulfide in the egg white reacts with the iron in the yolk to form iron sulfide. This iron sulfide surrounds the yolk when it is overcooked.

However, the presence of this green ring does not mean that the eggs are unsafe or unhealthy. They remain healthy and retain all their nutritional value.
How to avoid a green ring on eggs?

From a purely aesthetic perspective, you just need to cook your eggs properly to avoid this green ring. Cooking time is key; don’t overcook them. Here’s a simple method for properly cooking eggs:

Place the eggs in a saucepan and cover with cold water. The saucepan should be large enough to accommodate the eggs in a single layer. Bring the eggs to a boil, and when they are cooked, remove from heat and cover.

Let the eggs sit for 15 minutes, then rinse them with cold water to stop the cooking. And voilà, your hard-boiled eggs are ready, and without the green ring!
If you prefer soft-boiled or slightly runny eggs, shorten the cooking time.

Other tips for preparing and storing hard-boiled eggs:

Eggs should not be boiled for more than 12 minutes.
It is better to put the eggs in cold water and then boil them rather than putting them in pre-boiled water. Use the freshest eggs from the refrigerator as they are easier to peel.

Place hard-boiled, unpeeled eggs in an airtight container and store in the refrigerator. They will keep for up to a week.

If you’re used to hard-boiled eggs, you’ve probably noticed a green ring around the yolk.
